Chef Michael Smith’s innovative, immersive and interactive culinary experience is globally renowned for it’s true farm-to-fire-to-feast format. Every day the Fire Brigade of this legendary five-star country inn creates a new menu from their own organic farm, herb gardens and roster of Prince Edward Island’s farmers, fisher folk, foragers and culinary artisans. Everything is prepared from the live fires of their 25” long brick-lined, wood-burning, fire-breathing beast of a FireWorks and served by the chefs. The evening begins at 6pm with an epic journey of discovery and exploration of the Inns’ kitchens, whimsical grounds, herb gardens and organic farm. Along the way you’ll find an array of fire pits, flavours, drink stations and a huge pile of local oysters ready for the slurping. At 7pm guests sit at long butcher-block feast tables overlooking beautiful Bay Fortune. Everyday the menu includes freshly baked wood-oven bread, a taste-of-the-island charcuterie board, the day’s fish, local seafood chowder, the Inns’ famous organic salad, wood roasted meats, and vegetables all prepared before your very eyes.
